Worth the Suffering

Following in Tsan’s footsteps, our resident powerhouse Erin Gillett decided to take the plunge 28 days ago. As of today, she’s lost almost 8 pounds. Here’s a picture of her maxing out the inchworn this morning with the 0930 crew. A lot of sacrifice and discipline went into her weight loss program, but we have a feeling she’s happy with the results.

Be sure to ask Erin lots of questions regarding her process and give her a big pat on the back (or snuggle) to show your support!

    Okay, all you inspirational folks out there!! First of all, congratulations on the amazing successes… Secondly, I need your help. Several years ago, I lost 45 pounds– mostly by exercising a lot and eating very little. About 10 pounds has crept back on in the last year or so, and I’m ready to follow in your footsteps and challenge myself to lose it again by my birthday, which is Dec. 22. The difference this time is that I’m teaching part-time, chasing a 4 1/2 year old around, doing a consulting job and trying to start up a cake baking business. Thanks to the IC, I am happily exercising on a regular basis. BUT, I need food (and sometimes LOTS of it) to keep my energy throughout day! Any tricks that helped you or favorite high protein, low fat meals/snacks that I can count on? The simpler, the better! Thanks so much!

    Congrats to Erin. She works so hard all the time.

    Here’s some fast food ideas: If you’re a meat eater, have good quality deli meats on hand. Wrap them around fruits (apples, pears, etc. ) or veggies (celery, lettuce, etc.). Eat some good fats like avocados or nuts. Drink a bottle of water before your meal.

    If you’re a vegetarian, Shari can provide good ideas.

    Baked tofu, sashimi, egg whites with spinach, hard boiled eggs, lots of cottage cheese, baby spinach with italian canned tuna and no salad dressing (just some good vinegar or lemon juice, a tiny splash of excellent olive oil and herbs), pre-measured servings of nuts, fruit, tons of veggies.

    My favorite breakfast is lowfat cottage cheese with fresh blueberries and a handful of raw almonds. my co-workers think I’m a freakazoid because some days I like it so much I’ll eat it 3 times. nutricious and delicious.
